Spiced Roasted Veggies
Ingredients:
- sliced bell peppers (red, orange, and yellow or whatever colour you have on hand but the more colours the better!)
- cubed potatoes and/or sweet potatoes
- baby carrots or carrots sliced into small pieces/cubes
- avocado/olive oil
- salt
- ground sumac
- ground cumin
- ground coriander
- salt
- pepper
- dried basil
- dried oregano
- fresh herbs (like parsley/coriander/dill)
Directions:
- In a bowl add the veggies. Drizzle the veggies with enough avocado or olive oil to lightly cover the veggies.
- Add spices like sumac, cumin, coriander, salt, and pepper. You can eyeball the amounts of each spice to your liking.
- Place the veggies on a parchment paper lined baking sheet and top them with the fresh herbs.
- Bake at 350 F for 30-35 minutes or until the veggies are soft when you poke them with a fork.
- Allow to cool and then place them in your mason jar.
