Energy Balls

Ingredients:
  • 1 cup rolled oats
  • 1/4 cup shredded coconut (optional)
  • 1/2 cup nut butter of your choice (like almond or peanut butter, etc)
  • 1/4 cup ground flaxseeds
  • 1/2 cup dark (or semi-sweet) chocolate chips
  • 1/3 cup maple syrup or honey

Possible additions:
  • Add any crushed nuts if desired.
  • For carrot cake energy bites, add some vanilla extract, add 1/4 cup grated carrots, and omit the chocolate chips if you would like.

Directions:
  1. Combine all ingredients in a bowl. You can use a spoon to mix them or clean hands. Cover the bowl and place in the refrigerator to allow the mixture to set and chill for 1 hour. This will allow the mixture to be rolled into balls with more ease.
  2. Once you take the mixture out of the fridge, roll it into little 1-inch balls.
  3. Place the balls into a mason jar.
